Avocado toast happens to be one of my guilty pleasures. It is perfect anytime of day. It’s an excuse to eat a really nice slice of bread and load it up with your favorite veggies, resulting in something both healthy and satisfying! This time of year, sliced winter radish adds the right amount of crunch and spice, not to mention beauty.

Yield 1 serving (easy to scale to whatever group size you are serving)

Ingredients

  • 1 Slice Rustic Bread, 1/2″ thick
  • 1/2 Avocado
  • 3 Thin Winter Radish Slices
  • 1/2 Garlic Clove
  • Drizzle of Olive Oil
  • Squirt of Lemon
  • Sea Salt
  • Pinch of Fresh Herbs

Directions

  1. Toast bread to your liking. Rub 1/2 clove of garlic over the toasted bread, save remaining garlic for another purpose. Drizzle toast with a bit of olive oil.
  2. Loosen avocado in the peel and smash with a fork. Smear over the surface of your toast. Squirt with a touch of lemon juice. Sprinkle with sea salt.
  3. Spread radish slices and top with fresh herbs. Parsley is featured in this photo. Enjoy!
