Enjoy the crisp texture of toasted walnuts with blanched green beans. While lemon juice may discolor your green beans, lemon zest adds all the citrus flavor without any discoloration. Enjoy as a side dish, or served as a salad over a bed of fresh greens.

Yield 2-4 Servings

Ingredients

  • 1/2 lb Green Beans, trimmed
  • 1/4 cup Walnuts, toasted and chopped
  • 1 tsp Walnut Oil
  • 1 tsp Lemon Zest
  • 1 Generous Pinch Sea Salt

Directions

  1. Preheat oven to 300°. Place walnuts on a lined baking sheet. Cook for 6-8 minutes, until fragrant. Remove and cool for 5 minutes. Roughly chop the nuts and set aside.
  2. Remove both ends of the green beans. Steam for 3-4 minutes, remove from heat and drain. Let cool for 5 minutes.
  3. Drizzle steamed beans with walnut oil and stir to coat. Sprinkle walnuts, lemon zest, and salt over top. Serve as a side dish, or over a bed of greens as a salad.
