Looking for a quick and easy summer dish? Time to try ricotta, kale and mushroom toast! This recipe requires little use of heat allowing you to relax on a hot summer day and enjoy a delicious meal.

Ingredients:

Measurements of each ingredient depend on personal preference.

  • Wild Mushrooms
  • Garlic
  • Olive Oil
  • Kale
  • Fresno Chile
  • White Wine Vinegar
  • Salt and Pepper
  • Ricotta
  • Country-Style Bread

Directions:

  1. Cook wild mushrooms and sliced garlic in olive oil, stirring occasionally, until browned and crisp.
  2. Add torn kale leaves and sliced Fresno chile (seeded for less heat) and cook, tossing, until kale is wilted.
  3. Season with white wine vinegar, salt, and pepper.
  4. Season ricotta with salt and pepper.
  5. Spread the seasoned ricotta onto toasted country-style bread; spoon mushroom-kale mixture on top.
  6. Voila!
