Enjoy the flavors of the fall season with this easy and healthy granola recipe.

Yields approx. 8 cups

Ingredients:

  • 1 cup Dried Fruit (blueberries, cherries, or raisins)
  • 1 cup  Pumpkin Puree (not pie filling)
  • ½ cup Coconut Oil, melted and then measured
  • ¼ cup Maple Syrup
  • ¼ cup Local Honey
  • 2 tsp Cinnamon
  • 1 tsp Almond Extract (OR 1 Tbsp vanilla extract)*
  • Generous pinch sea salt
  • 4 cup  Oats
  • 1¼ cup Raw Nuts, chopped (pecans, walnuts, or almonds)
  • ½ cup   Raw Sunflower Seeds
  • ½ cup   Raw Pumpkin Seeds

Directions:

  1. Preheat oven to 325ºF degrees. Line 3 baking sheets with parchment paper. 
  2. In large bowl, whisk pumpkin, oil, maple syrup, honey, cinnamon, extract, and salt until combined into a smooth paste. Stir in oats. Add chopped nuts and seeds and stir until evenly coated.
  3. Divide granola onto parchment lined baking trays and spread into single layers. 
  4. Bake for 25 minutes then flip granola, moving browned edges to the interior of the trays and soft granola bits towards the outer perimeter. Bake 15-20 minutes longer until golden brown.
  5. Remove from oven and leave on trays until completely cool. Mix in dried fruit. Store in tightly sealed mason jars. Keeps fresh for weeks, if you have that much willpower!
