Enjoy the flavors of the fall season with this easy and healthy granola recipe.
Yields approx. 8 cups

Ingredients:
- 1 cup Dried Fruit (blueberries, cherries, or raisins)
- 1 cup Pumpkin Puree (not pie filling)
- ½ cup Coconut Oil, melted and then measured
- ¼ cup Maple Syrup
- ¼ cup Local Honey
- 2 tsp Cinnamon
- 1 tsp Almond Extract (OR 1 Tbsp vanilla extract)*
- Generous pinch sea salt
- 4 cup Oats
- 1¼ cup Raw Nuts, chopped (pecans, walnuts, or almonds)
- ½ cup Raw Sunflower Seeds
- ½ cup Raw Pumpkin Seeds
Directions:
- Preheat oven to 325ºF degrees. Line 3 baking sheets with parchment paper.
- In large bowl, whisk pumpkin, oil, maple syrup, honey, cinnamon, extract, and salt until combined into a smooth paste. Stir in oats. Add chopped nuts and seeds and stir until evenly coated.
- Divide granola onto parchment lined baking trays and spread into single layers.
- Bake for 25 minutes then flip granola, moving browned edges to the interior of the trays and soft granola bits towards the outer perimeter. Bake 15-20 minutes longer until golden brown.
- Remove from oven and leave on trays until completely cool. Mix in dried fruit. Store in tightly sealed mason jars. Keeps fresh for weeks, if you have that much willpower!
