It’s Beet Time! This recipe is a fresh, flavorful way to prepare beets. Add this as a fun, colorful side dish to your summer dinners! Thank you to our Full Season Farm Management Intern, Izzy, for making this recipe!
Recipe By Izzy Mackenzie-2025 Full Season Farm Management Intern
Ingredients:
- 2-3 Beets
- 3 Tbsp white wine vinegar
- 1/2 Tbsp spicy Dijon mustard
- Shallot, Minced
- Dill, Chopped
- 2 Tbsp olive oil
- 2-3 Small pickles, cut into circles
- 1 Avocado, cut into slices

Directions:
- Put beets in a pot and fill with water till the beets are fully submerged
- Add 1 Tbsp of vinegar to the water and bring to a boil
- Cook beets till a fork can pierce through the beets
- Peel beets (use gloves to avoid staining your hands!)
- Place beets on a plate, and smash them with a bowl or cup
- Top the beets with the remaining 2 Tbsp of vinegar, spicy Dijon, shallot, dill, olive oil, pickles, and avocado
- Enjoy
