Ingredients:
- Fennel, cut into thick slices
- Fennel Frawns, Minced
- 3 Tbsp Olive oil
- Salt and pepper
- 2 Tbsp mint
- 1 Cup parsley
- 2 Cups scallion greens
- 1 Spicy green pepper
- 1 Avocado
- 1 Lemon juice
- 2 Garlic cloves (or scapes)
- ½ Cup olive oil

Directions:
- Preheat oven to 400°F
- Combine mint, parsley, scallions, green pepper, avocado, lemon juice, garlic, and ½ cup of olive oil in a blender and blend till smooth (add more oil if needed)
- Season with salt and pepper
- Leave the goddess sauce aside in the fridge
- On a sheet tray lined with parchment, place fennel and top with 3 Tbsp of olive oil
- Season with salt and pepper
- Roast fennel for 15-25 minutes until browned
- Top fennel with minced frawns and goddess sauce
