Ingredients:

  •  Fennel, cut into thick slices
  • Fennel Frawns, Minced
  • 3 Tbsp Olive oil
  • Salt and pepper
  • 2 Tbsp mint
  • 1 Cup parsley
  • 2 Cups scallion greens
  • 1 Spicy green pepper
  • 1 Avocado
  • 1 Lemon juice
  • 2 Garlic cloves (or scapes)
  • ½ Cup olive oil

Directions:

  1. Preheat oven to 400°F
  2. Combine mint, parsley, scallions, green pepper, avocado, lemon juice, garlic, and ½ cup of olive oil in a blender and blend till smooth (add more oil if needed)
  3. Season with salt and pepper
  4. Leave the goddess sauce aside in the fridge
  5. On a sheet tray lined with parchment, place fennel and top with 3 Tbsp of olive oil
  6. Season with salt and pepper
  7. Roast fennel for 15-25 minutes until browned
  8. Top fennel with minced frawns and goddess sauce
