The end of Spring and the beginning of Summer is the short window for garlic scape season! Garlic Scapes are delicious and flavorful. Try this new way to cook garlic scapes to add a savory side to any summer dish, or the perfect veggie snack! Thank you to our Full Season Farm Management Intern, Izzy, for making this recipe!

Ingredients:

  • 1 Egg or 1 tablespoon ground flax seed
  • 1/2 cup flour
  • 1 beer or sparkling water
  • 1 bunch garlic scapes
  • Canola or vegetable oil

Directions:

  1.     Wash garlic scapes
  2.     Boil water and add scapes, then cook for 2 minutes
  3.     Drain scapes and let dry for 30 seconds or pat with a  towel
  4.     Chop garlic scapes into 1 ½ or 2 inches (fry size!)
  5.     If using flax seed, combine one tablespoon of ground flaxseed and three tablespoons of water and allow to sit for about 5 minutes.
  6.     Combine egg (or flaxseed), flour, and ¼ bottle of beer or sparkling water and mix until it turns into a pancake-like batter (Add additional beer or sparkling water if needed)
  7.     Fill a pot halfway with oil and heat it till it reaches 375 degrees Fahrenheit
  8.     Add scapes to batter and fully coat
  9.     Drop scapes into hot oil and let fry for 5 minutes or until golden brown
  10.     Salt scapes after taking them out of the oil
